This is because the energy required for evolution burns a lot of calories, and the Pokémon is likely bulking up so it had said energy to undergo evolution without any detrimental health effects.

training. Generally, if they're smarter pokemon, you can just tell them to stop and eventually with some willpower and help they'll stop. if they're a lil dumber, train them like a dog in that fact, associate pumpkins and banners with non-food items and they'll eventually stop. if they do not, put their most hated food and cover/make the item smell like that, eventually they will stop even if they don't smell it anymore
