This morning I decided to make a spin on pancakes. Cannoli Pancakes! Which are fluffy ricotta-infused pancakes with classic cannoli flavors like vanilla, cinnamon, mini chocolate chip, and some added blueberries! My homemade Cannoli Pancakes turned out absolutely delicious with how creamy the filling is which leaves added maple syrup to not be necessary. The sweet, whipped ricotta filling absolutely mixes wonderfully to ensure it is not dry and bursting with deliciously non-overpowering flavors! 💚🍪
